I'm sharing this one because I know how I used to hate eating vegetables. My mother used to cook them till they were very soft and I only found out later that I actually like most of my veggies raw, much better!
To make a healthy snack or addition to your lunch or dinner you need:
one or two soft tortilla wraps (they're like pancakes, you know?)
A bit of cucumber
one or 2 small carrots (or a big carrot)
Some red (bell) pepper (or green or yellow, if you prefer), I'd say about 1/6 of a whole pepper
Some celery (on stalk), if you like celery
you can use light mayonaise (yoghurt based mayonaise is nice) or use some soft garlic butter
To prepare it:
Simply cut up all the veggies as fine as you'd like or as chunky as you like. Me, I like my celery very fine, so I put that in a kitchen blender...
Warm up the tortillas so they're easy to roll.
Spread a little bit of mayo or garlic butter on the tortillas and add a little bit of all the veggies on it. As much as you'd like, but not to much.
You need to roll the tortilla up. Fold the bottom half up, then fold the right side over, and then the left side over the right side. You can wrap a napkin or some aluminum foil around it to keep it rolled up.
And voila: a healthy veggie treat!
... if you really like, you can add other veggies to it, or even some cold meat.
Try adding tomato, corn or something to it!
